A high tea menu must is scones, served with jam and thick cream (clotted if you can get it). However, many of my guests always tell me that they are unable to make light and fluffy scones and ask me what my secret is.

It really isn't a secret recipe, I use the lemonade scone recipe. Just three ingredients and we are good to go.

3 cups of SR flour

1 cup pouring cream

1 cup of lemonade (you could use pretty much any carbonated drink, depending on what flavour you would like in your scones. One day I will get around to making ginger beer scones.


Once you have those ingredients together, sift your flour into your mixing bowl, add the liquids and stir until just combined.


Tip your mix out onto a floured board or bench and spread the dough to about an inch thick, then give a flip over, flour the top of the dough. Use the size cutter that you want and cut out your scones, placing them on a tray lined with baking paper.


TOP TIP: Do not pack your raw scones too closely together, allow some room for them to expand.


Place the tray in a prewarmed oven- I use fan forced at 180, but you will need to work out what is best in your oven.


Bake until JUST lightly browning on top and remove. I cover mine with a clean tea towel so that they can cool more slowly.


TOP TIP 2 - Do not overcook your scones, they will continue cooking in their own heat after you remove them from the oven.


This will make you about a dozen average size scones.
